Roasted Red Pepper Chaffle
INGREDIENTS:
1 red pepper
1 tsp olive oil
2 tbsp mozzarella
1 tbsp chopped spinach
2-3 tbsp egg whites
Sprinkle of garlic powder, onion powder, oregano, salt and pepper
1 tbsp feta cheese
DIRECTIONS
Preheat oven to 400 degrees.
Dice red pepper and toss with olive oil and salt. Bake for 20 minutes.
In a mini waffle maker, start by spraying with nonstick cooking spray, then add 1 tbsp mozzarella, 2 tbsp red pepper, spinach, egg whites, sprinkle in seasonings then top with feta and rest of mozzarella.
Cook for 1-2 minutes.
