SPINACH PESTO BOWL
INGREDIENTS:
Garlic Banza Rice
Chicken sausage
1 tsp olive oil
2 tsp Kale Vegan Pesto (Trader Joe's)
2 tsp Mayo
Spinach
Grape tomatoes
Parmesan Cheese (I used dairy free)
Basil and Cracked Pepper Chicken
Sausage (from costco)
DIRECTIONS:
Prep banza rice according to the instructions and set aside.
Slice up chicken sausage and add it to a skillet over medium heat with olive oil. Brown sausage for 1-2 minutes each side.
Meanwhile, combine kale pesto and mayonnaise to a bowl. Stir together and add a little water to thin it out.
Add a handful of spinach, tomatoes, banza rice and kale pesto mixture to the skillet with the chicken sausage and mix together. Cook for 1-2 minutes and remove from heat.
Top with parmesan cheese and enjoy.
