  1. Add all ingredients except chicken into a blender. Blend until smooth.
  2. In your instant pot, add chicken and sauce. Cook on high pressure for 10 minutes.
  3. Shred chicken and serve over lettuce and top with cojita cheese, avocado, cilantro and tortilla strips.
